Ingredients

2 sweet potatoes or yams

2 Tbs. olive oil

2 Tbs. brown sugar

salt and pepper to taste

(optional: cinnamon, ginger, or herbs)

honey for drizzle

Preparation

  1. Preheat oven to 425 degrees.
  2. Line a shallow cookie sheet with foil.
  3. Cover with olive oil.
  4. Wash sweet potatoes. Leave skin on.
  5. Cut each potato in half lengthwise. Cut each half into 8 wedges to equal a total of 32 wedges.
  6. Place cut side down on oiled pan.
  7. Sprinkle with salt, pepper and brown sugar and any optional ingredients.
  8. Bake for 11 minutes and then turn each wedge so the other cut side is down. Bake 11 minutes longer.
  9. Remove to paper towel. Place in serving bowl and drizzle with honey. ENJOY!!!
