Ingredients
2 sweet potatoes or yams
2 Tbs. olive oil
2 Tbs. brown sugar
salt and pepper to taste
(optional: cinnamon, ginger, or herbs)
honey for drizzle
Preparation
- Preheat oven to 425 degrees.
- Line a shallow cookie sheet with foil.
- Cover with olive oil.
- Wash sweet potatoes. Leave skin on.
- Cut each potato in half lengthwise. Cut each half into 8 wedges to equal a total of 32 wedges.
- Place cut side down on oiled pan.
- Sprinkle with salt, pepper and brown sugar and any optional ingredients.
- Bake for 11 minutes and then turn each wedge so the other cut side is down. Bake 11 minutes longer.
- Remove to paper towel. Place in serving bowl and drizzle with honey. ENJOY!!!
