Ingredients

3 lbs. carrots, peeled and cut into sicks

2 bunches scallions, tops and roots trimmed

6 tblsp melted butter

3/4 tsp salt

3 tblsp honey

juice and grated rind of 1 lemon

Preparation

  1. Preheat oven to 350 deg.
  2. Immerse the carrots and scallions in boiling, well-salted water and cook until tender crisp. Place in cold water to stop cooking and drain
  3. Combine the remaining ingredients, varying the proportions according to the sweetness of the carrots. Place carrots and scallions in a baking dish, pour the sauce over them and bake for 15 minutes.
