Ingredients
3 lbs. carrots, peeled and cut into sicks
2 bunches scallions, tops and roots trimmed
6 tblsp melted butter
3/4 tsp salt
3 tblsp honey
juice and grated rind of 1 lemon
Preparation
- Preheat oven to 350 deg.
- Immerse the carrots and scallions in boiling, well-salted water and cook until tender crisp. Place in cold water to stop cooking and drain
- Combine the remaining ingredients, varying the proportions according to the sweetness of the carrots. Place carrots and scallions in a baking dish, pour the sauce over them and bake for 15 minutes.
