Ingredients

3 1/4 cup white flour

1 cup rolled oats

1/4 cup honey

2 tbsp butter

2 tbsp Dijon mustard

1 package dry yeast

1 tsp salt

1 cup water

1 egg

Preparation

  1. Mix 1 cup of the flour, the oats, butter, mustard, yeast, and salt in a large mixing bowl or mixer.

  2. Meanwhile, heat the water in a small saucepan over medium heat until it’s at 120-130 F. Add the water to the mixed ingredients and mix for a couple minutes. Add the egg until combined. Add enough flour to make dough easy to handle with hands.

  3. Knead dough on a floured surface for 5-10 minutes until it forms a ball easily. Place in a greased bowl (use butter or a light tasting oil), turn over once to coat, and let rise in a warm area for 1 1/2 hours until doubled in size.

  4. Punch down dough and let rest five minutes. Form into a ball, place in greased pie plate and flatten slightly. Sprinkle with oats and let rise until nearly doubled. Preheat oven to 375 F.

  5. Bake for 25-30 minutes or until golden and sounds hollow when tapped on top.
