Ingredients
1 dozen large scallops, trimmed and halved
1 cup honey-mustard
1 red bell pepper, cleaned, seeded and cut into cubes
3 1/2oz baby corn cobs, sliced into 1/2in pieces
4 slices bacon, cut into fourths and microwaved until slightly browned
1 bunch scallions, cleaned, sliced into 1 inch pieces
Preparation
light grill and heat to very hot
marinate scallops in honey-mustard, turning scallops to coat,for 10 minutes or longer
divide scallops, peppers, corn, scallions and bacon into four portions and thread onto skewers
place skewers on the grill, brush with remaining honey-mustard and cook for 4-5minutes on each side basting as you turn. Cook until the scallops become opaque and vegetables are softened.
