Ingredients

2 Tablespoons olive oil

2 cups chopped onion.

1 (28 oz.) can diced tomatoes with Italian seasoning

1 can (15 oz. each) of red kidney beans, black beans and pinto beans rinsed and drained

1 (15 oz.) can tomato sauce

1/3 cup honey

1/2 cup mesquite barbecue sauce

2 Tablespoons instant coffee granules

1/2 Tablespoon hot sauce

Salt and pepper, to taste1 slice raw hickory smoked thick-cut bacon

To top:

5 slices cooked hickory smoked thick-cut bacon, chopped ¼ red onion, finely chopped

Preparation

  1. In a large saucepan, heat oil. Add onions and saute until tender, about 10 minutes.

  2. Add remaining ingredients except for the cooked bacon and the red onion. Bring the beans to a simmer. Simmer over low heat for 30-40 minutes until thick. Remove bacon slice (if desired)

  3. Serve hot, topped with chopped red onions and cooked bacon
