Ingredients

1/2 cup peanut oil

20-30 large shrimp

1/4 cup shredded ginger

1 cup raisin

1/4 cup vinegar

1/4 cup honey

1/4 cup chives

1/4 cup lime juice

mayonnaise no. 1:

1 egg yolk

1/2 cup peanut oil

mayonnaise no. 2:

1 egg yolk

1/2 cup peanut oil

1 tablespoon mustard powder

Preparation

Soak raisins in vinegar, 1/2 hour.

Clean and devein shrimp.

Make basic mayonnaise, chill.

Steam shrimp with shredded ginger. Set aside, discard ginger.

On cutting board, chop shrimp. Place shrimp in bowl. Drain raisins, add to shrimp. Drizzle honey and mix. Add chives. Add mayonnaise and mix.

Cover and chill at least 4 hours.

When ready to serve, make second mayonnaise, adding mustard powder to egg yolk.

Toss in mayonnaise. drizzle lime juice and serve on hot dog roll or some other bread.
