Ingredients
4 cups diced (1/2 in. cubes) ripe honeydew melon
1/3 cup plain yogurt
3 lime juices
grated zest of 1 lime
1 tablespoon honey
Preparation
- Combine: 2 cups of melon w/yogurt, lime juice, and zest in food processor/blender until smooth.
- Microwave honey for 30 seconds until thinned.
- Add honey to melon mixture, process again to combine.
- Stir in remaining 2 cups of melon.
- Fill pop molds w/mixture, insert sticks, freeze for 6 hours.
- Remove from freezer, let stand for 5 minutes to remove mold.
