Ingredients
Sauce:
1/4 cup + 2 TBSP Ketchup
1/2 cup + 1 TBSP Sugar
3/4 cup H2O
2 TBSP soy sauce
2 TBSP corn starch mixed
Batter for Tofu:
1 cup flour
1/4 tea baking soda
3/4 tea baking powder
1/4 tea salt
1/2 cup H2O
13 oz Tofu cubed
8 oz diced green & red pepper
6 oz sliced onion
3/4 cup pineapple pieces
Preparation
For sauce, combine everthing but 1/4 c H2O + 2TBSP corn starch and bring to boil. Once boiling, add rest of H2O and corn starch. Cook briefly until thickened, take off heat.
For tofu, combine batter ingrediants & coat dry cubes of tofu. Deep fry at 350 degrees.
Saute onions and peppers until cooked, combined with fried tofu, pineapple bits and sauce. Serve over rice.
