Ingredients
1 can of black eye peas, 15 oz.
1/4 onion, cleaned and chopped.
1/4 green pepper, cleaned and chopped.
Olive oil.
1/4 pound chopped or shredded smoked ham.
1/8 tsp. garlic powder, or a garlic clove.
A cup of rice.
Two cups of water.
Salt and pepper to taste.
Preparation
Cook cup of rice in two cups of water until tender. Set aside to finish absorbing water, and fluff.
In a frying pan, heat oil over medium heat, then saute’ chopped onion and green pepper. Reduce temperature to medium low. Add can of black eye peas and mix in garlic powder and chopped or shredded ham. Heat combination. Add salt and pepper to taste.
Serve the black eye pea mixture over a bed of hot rice.
