Ingredients

Ingredients:

2 T olive oil

2 garlic cloves, minced

2 C chopped fresh greens (such as kale, Swiss chard, spinach, beet greens or a mix)

2 T crumbled feta or goat cheese

3 - 4 eggs, lightly beaten

3 T chopped Kalamata olive

1 lemon, cut into wedges (optional)

Preparation

Heat oil over med heat, add garlic & stir until fot. Add greens & stir until soft.

Evenly distribute your greens on the bottom of the skillet & then sprinkle w/ feta. Pour eggs over top & cook until eggs are just as you like them. (You can cover with a lid to hasten the cooking time)

Top w/olive & sprinkle with a tiny bit of salt. Serve w/lemon wedges.
