Ingredients

2 tbsp + 2 tsp butter

1/4 cup minced yellow onion

2 tbsp + 2 tsp flour

1 1/2 cups milk

dash red pepper

1/2 tsp salt

2 egg yolks

1/2 cup grated Parmesan Cheese

1 tbsp butter

8 slices toast

1 lb cooked sliced turkey

8 tomato slices

8 crisp slices bacon

1/2 cup cheddar

Preparation

Melt butter and onions over med heat in a saucepan. When onions are translucent, whisk in the flour and cook until it smells nutty. Add the milk, salt and pepper and bring to a boil, cooking until it thickens. Cool slightly. Add two egg yolks, tempering as necessary, Parmesan cheese, and additional butter. Cook over low heat until it thickens further.

Assemble sandwiches: layer turkey and tomatoes on toast. Add heavy layer of cheddar and sauce. Broil until golden brown and top with bacon
