Ingredients

1 Pound red potatoes, cooked and peeled

1/4 cup picante sauce

1 to 2 tablespoons lime juice

1 tablespoon olive oil

1/4 teaspoon salt

1/8 teaspoon pepper

1 large tomato,seeded and chopped (1 cup)

1/2 cup sliced pitted ripe olives

2 green onions, sliced

cilantro to taste

Preparation

Cube potatoes.

Combine picante sauce, lime juice, oil, salt, and pepper in a small microwave-safe bowl, uncovered, on high for 45 to 60 seconds or till heated through. Add sauce to cooked potatoes. stir in tomato, olives, green onion, and cilantro, toss to coat.
