Ingredients

1 cup sugar

1/4 cup butter, melted

3 bananas

1/4 cup skim milk

1/4 cup low fat sour cream or yogurt

2 egg whites

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

Preparation

Combine sugar and butter in a bowl; beat at medium speed of a mixer until well-blended. Add banana, milk, sour cream (or yougert), and egg whites; beat well, and set aside.

Combine flour, baking soda, and salt; stir well. Add dry ingredients to creamed mixture, beating until blended.

Spoon batter into 9" loaf pan (coat loaf pan with cooking spray first) and bake for 1 hour and 10 minutes. Let cool in pan for approximately 10 minutes and then remove from pan and let cool completely on a wire rack. (If making in 9x12 pan, bake 30-35 minutes).
