Ingredients

2 cups Fresh Huckleberries

2 tablespoons minced shallots

1 tablespoon chopped fresh thyme

1/2 cup brown sugar

1/4 cup sherry vinegar

2 tablespoons Port sea salt, to taste

Freshly groud pepper, to tase

Preparation

Bring the first six ingerdients to a boil in a small saucepan. Stir untill the brown sugar dissolves. Turn heat down to a simmer and cook untill reduced by half, approximentely 25 min. Season with salt and pepper serve with meat or poltry
