Ingredients
4 eggs
3 cups sugar
8 tablespoons sifted flour
5 teaspoons baking powder
1/2 teaspoon salt
2 cups medium coursely chopped cooking apples
2 cups chopped pecans
3 teaspoons vanilla
Preparation
Beat whole eggs until frothy and pale yellow colored, then add the rest of the ingredients in the order listed. Mix well to ensure all the ingredients are completely incorporated.
Divide the mix in half and pour into 2 well buttered 8x12 inch baking pans. Bake in a 325 degree oven for 45 minutes. It will form a brown crust.
To serve, scoop out like a pie to keep the crust on top of the serving plate. The crust is very brittle and breaks easily.
May be served with Cool-Whip, Ice Cream, or your favorite whipped cream topping. For something extra, sprinkle some more nuts on it once topped.
