Ingredients

3 Cups All Purpose flour

1 tsp baking soda

1/2 tsp salt

2 cups sugar

1 tsp ground cinnamon

3 eggs beaten

3/4 cup vegetable oil

1 1/2 tsp vanilla

1 8oz can crushed pineapple with juice (undrained)

1 cup chopped pecans

1 3/4 cups mashed bananas

1/2 cup chopped pecans (yes, in addition to the other cup)

Cream Cheese Frosting (see other recipe)

Preparation

Preheat oven to 350

Combine first 5 ingredients in a large bowl, then add eggs and oil. Do not beat. Stir in vanilla, bananas, pineapple and one cup of the pecans.

Pour batter into 3 greased and floured 9" round pans.

Bake at 350 for 23-28 minutes or until toothpick in center comes out clean.

Cool for 10 minutes in pans, then remove and put on racks to cool completely.

Ice once completely cool. Stir 1/2 cup of remaining pecans into icing.
