Ingredients

2small cans garbanzo beans, drained (or one large 30oz can)

3 tbsps tahini

1/4 cup lemon juice

1 teaspoon salt

3 cloves garlic, (roasted)

1 tablespoon olive oil

1 pinch paprika

1 teaspoon minced fresh garlic

Preparation

Pinch off all bean skins, (this is the only thing that is time consuming.) Roast some garlic at 400 for 30 minutes. (however many peices you like) You can also roast some red peppers at this time, if you want to put them in. Then you just put everything in the food processor, carefully adding the liquid slowly. Remember you can’t take out excess liquid, so put it in slowly. Pulse untill everything is mixed, then finish it with lemon and olive oil. Delicious with pita, seasoned, herbed or cheese baked pita.
