Ingredients

6 T. Butter

1 medium onion, sliced

2 green peppers, sliced thin

1 lb. ground beef

1.5 t salt

.25 t. pepper

2 eggs, beaten

2 c. corn, drained

4 medium tomatoes, sliced

.5 cup bread crumbs

Preparation

Melt 4 T. butter in skillet. Saute onion and green pepper for 5 min. Add beef, salt, and pepper, cook for 5 min stirring constantly. Remove from heat, and let stand for 5 min. Add eggs. In a 1.5 qt. casserole, spread half the corn, half the meat, then half the tomatoes. Repeat. Sprinkle with bread crumbs, and dot with remaining butter. Bake at 375 degrees for 1 hour.
