Ingredients

1/4 c cornstarch

1/4 c water

1 1/2 lb boneless pork, cut into thin strips

2 T sesame oil, divided 2 and 1

4 small zucchini, sliced (about 4 c)

1/2 - 3/4 c onion pieces, cut in roughly 1" squares

1/3 Hunan (substitute Hoisen + 1/2 t red pepper flakes if Hunan unavailable)

1T toasted sesame seed

Hot cooked basmati rice

Preparation

Combine cornstarch and water; stir until smooth. Add pork and stir with fork to completely coat each piece of meat.

Heat 2 T sesame oil over medium high heat in a wok. Add pork mixture; stir fry 3 minutes or until pork is no longer pink. Remove pork; set aside. Heat remaining 1 T oil and add zucchini, stir-frying 1 minute; add onion and continue stir-frying 2 more minutes or until tender.

Return pork to wok; add hunan sauce (or hoisen sauce and red pepper flakes) and sesame seeds. Stir fry until thoroughly heated. Serve over hot basmati rice,
