Ingredients

1/3 lb. arugula

1/2 avocado-chopped

1/5 red onion -finely diced

1/2 can of cannelleni or great northern beans

1/4 cup of pistachios

1/2 package of fresh blackberries

kosher salt

pepper

juice from 1/2 lemon

olive oil

balsamic vinegar

Preparation

In a large bowl, add the dry ingredients, except salt, first. All the wet ingredients and the salt will begin to wilt the arugula as soon as they are added

add lemon, oil and vinegar in the ratio that you like, but moderate the total amount because you want enough dressing to stick to the leaves, but you don’t want any extra liquid at the bottom of the bowl

after all ingredients are added, mix until everything is coated and no liquid is left at the bottom of the bowl.
