Ingredients
3 lbs ground turkey, beef, chicken or pork
1 1/3 cup bread crumbs
2/3 cup minced onion
3 eggs
3 tsp salt
1/2 tsp ground ginger
1/2 cup milk
2 Tbs shortening
6 Tbs cornstarch
1 cup brown sugar
2 cans 14 oz pineapple chunks, drained (reserve liquid)
12 oz pineapple juice
2/3 cup vinegar
2 tbs soy sauce
2 chopped bell peppers
1 med onion chopped
1 small can water chestnuts, drained
Preparation
Combine meat, bread crumbs, minced onion, eggs, salt, ginger, and milk in a large bowl. Form into walnut sized balls, then saute in shortening until brown and cooked through. Drain and set aside. Mix cornstarch and brown sugar in large pot. Stir in reserved juice from chunks and additional juice. Stir in vinegar and soy sauce. Cook over medium heat until bubbling. Boil 1 minute then add meatballs, peppers, onions and water chestnuts. Heat through. Serve in a chafing dish or crockpot to keep warm. They do very well prepared in advance.
