Ingredients

7 lbs sliced green tomatoes

3 c lime (some only use 1 c)

2 gallons water

5 lbs sugar

3 pints vinegar

1 t cloves

1 t ginger (or 1-2 inches of sliced fresh ginger.

1 t allspice

1 t celery seed

1 t mace

1 t cinnamon or 5 sticks

Preparation

Slice tomatoes into sandwich size. Disolve 3 cups of lime in 2 gal of water. Soak tomatoes 24 hours. Drain and soak in fresh water 4 hrs changing every hr. Drain and place in kettle. Bring mixture of other ingredients to boil. Pour over tomatoes and let stand overnight. Next morning, boil for 1 hour. Seal in jars
