Ingredients
3# ripe tomatoes, peeled, seeded and finely chopped
3 T. olive oil
5 cloves garlic, minced
1 c. shredded basil leaves
5 c. chicken stock
salt to taste
freshly ground pepper
pinch of sugar
Preparation
Pour oil into a medium saucepan, add tomatoes and cook over medium heat for about 5 minutes. Add garlic and basil and cook about 5 more minutes. Pour in the stock and season with salt and pepper to taste. Add sugar. Bring to a boil, reduce heat and simmer 5 minutes. Chill soup for several hours or overnight before serving.
