tablespoon vegetable oil

cup finely chopped onion (1 medium)

cups finely chopped cooked turkey

1 1/2

cups frozen corn, thawed (from 12-oz bag)

teaspoon pepper

cup shredded pepper Jack cheese (4 oz)

cup original all-purpose baking mix

1/2

cup milk

cup Pillsbury™ Italian cheese & herb baguette chips (from 7-oz bag), crushed

Preparation

Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.

In 10-inch skillet, heat oil over medium-high heat. Cook onion in oil 3 minutes, stirring frequently; stir in turkey, corn and pepper. Cook and stir until mixture is heated through. Cool 5 minutes; stir in cheese.

In medium bowl, stir baking mix, milk and eggs with whisk or fork until blended. Spoon slightly less than 1 tablespoon baking mix mixture into each muffin cup. Top each with about 1/4 cup turkey mixture. Spoon 1 tablespoon baking mix mixture over turkey mixture in each muffin cup. Spoon 1 tablespoon crushed baguette chips over top of turkey mixture on each.

Bake about 22 minutes or until toothpick inserted in center comes out clean and chips are golden brown. Cool 2 minutes. With knife, loosen sides of pies from muffin cups; remove from pan. Cool about 5 minutes before serving.
