Ingredients
2 cans ( 15 +- ounce) red kidneys beans, rinsed and drained
1 can Rotel chopped tomatoes & green chiles
2 cups quick cook brown rice
1 pound ground round
1 medium chopped onion
1/2 cup chopped bell pepper
2 cloves minced garlic
1/2 teaspoon each of salt & black pepper
1/2 cup beef broth
Preparation
Brown the ground round along with chopped onion, chopped pepper and minced garlic over medium-low heat, till ground round is cooked through.
Add Rotel tomatoes & green chiles and beef broth. Stir to combine.
Add kidney beans and brown rice and stir well to mix. Bring to a boil and simmer for 10 to 15 minutes.
Serve with vegetable of choice and crusty bread.
