Ingredients

3 pints cherry or grape tomatoes

1 1/2 tbl plus 3/4 cup good olive oil

1 tsp dried thyme or herbs de provence

1 1/2 tsp kosher salt

1/2 tsp black pepper

3 large garlic cloves

1/3 cup flat leaf parsley, chopped

2 cups coarse bread crumbs

Preparation

  1. preheat oven to 400 degrees. Place tomatoes in 9x13 in ceramic dish. Add 1 1/2 tbl oil, thyme/herbs de provence, 1 tsp salt and pepper. Toss together. Spread tomatoes evenly in pan.
  2. Chop garlic and parsley and mix with bread crumbs. Add 3/4 cup oil, then spread evenly over tomatoes.
  3. Bake gratin until crumbs are golden, 40-45 mins. Serve hot or warm.
