Ingredients

4 cups broccoli florets, cut into small pieces

1 Tbl finely grated fresh ginger

2 minced cloves garlic

1 tsp garam masala

1/2 tsp cumin

1/4 tsp turmeric

1/4 tsp cayenne

1/8 tsp salt

1/8 tsp fresh pepper

1/2 tsp lemon zest

3 Tbl fresh lemon or lime juice

4 salmon fillets, skin removed

2-3 sliced scallions

1/3 cup raisins or dried mango(optional)

2 Tbl ex-virgin olive oil

Preparation

Preheat oven to 500

  1. Parboil broccoli in boiling water for 3 minutes. Shock in ice water. Drain well.
  2. In a small bowl stir together next 10 ingredients to form loose paste.
  3. Spread paste all over fish.
  4. Lay out four 12 inch pieces of aluminum foil. Place 1 cup of broccoli in center of each piece. Form a bed. Top with seasoned fillet. Sprinkle with some scallions and raisins. Drizzle each with a 1/2 T of olive oil.
  5. Match up foil ends and roll to form tight packets. Place on baking sheet. Bake until fish is cooked through, 15 -20 minutes, depending on thickness. Place on plates. Slice open packets. Serve immediately.
